Corn Avocado Salsa

 I adapted this recipe from a recipe found in a Weber BBQ cookbook. I’ve made it many times as a side dish, accompanying fish, meat or chicken. I usually adjust the quantities of ingredients to suit my taste.


2 cups             corn (steamed and cooled or canned and drained)

2                      avocadoes

2 Tbsp            prepared pesto

1 tsp               olive oil (optional)

3 Tbsp            Lime/lemon juice

                        Salt & pepper

In a bowl, combine corn and pesto. Cut the avocadoes into small cubes and add to the corn mixture. Add the lime/lemon juice, olive oil if using. Season to taste with salt and pepper. Stir until the avocadoes begin to soften and break apart. Some of the avocadoes should still be in cubes while others have created a “sauce” over the corn. The mixture should not be too wet, almost like a salsa consistency. Chill and serve!

Delicious on its own or as a side dish.

Serves 4, depending on portion size.
